Extraction Optimization of Crocin from Gardenia (Gardenia jasminoides Ellis)Fruits Using Response Surface Methodology and Quality Evaluation of Foam-Mat Dried Powder

The crocin in gardenia, as a medical plant, has drawnthe attention of researchers and scientists due to its color high antioxidant activity. To optimize the extraction parameters from gardenia fruits, response surface methodology (RSM) was employed.The effects four independent variables, namely temperature (45–55 °C), time (40–60 min), percentage fruits(15–25%), ethanol concentration (50–60%),on compound were investigated. extract fruit dried at different temperatures (55–70 °C) by foam-mat drying method. optimal an 55 °C, 57 min, percent fruits solvent 24%, 56%. results showed that powder had maintained content well(6.64 mg/g), product with low water activity moisture 0.33 5.72%, respectively, is suitable for storage. also maintains natural characteristics inherent raw materials, which could be used supplemental ingredients other food industries.
